1 cup firm tofu, sliced into ¾-inch cubes
4 tablespoons red miso
5 cups vegetable stock
A bunch of scallions, thinly sliced, tops removed and set aside
1 cup bok choy, sliced thinly
2 tablespoons shoyu (Japanese soy sauce)
3 slices of fresh ginger
¼ cup chopped fresh cilantro, stalks and leaves separated
1 red chili, seeds removed and sliced (optional)
Directions: Place the scallion tops in a pan together with the ginger, cilantro stalks, chili, and vegetable stock. Cook over medium heat to boiling. Simmer for 10 minutes, and strain the broth through a sieve.
Next, add the green portions of the scallions, the tofu, and the bok choy. Simmer for 2 minutes. In a bowl, dissolve the miso with 3 tablespoons of the just-cooked broth and stir into the soup. Add shoyu and miso to taste.
Finally, add the cilantro leaves and the white part of the scallions, and simmer for another minute. Add chilies if desired, and serve.
